Shiitake Mushrooms | Easy Pan Preparation
Shiitake mushrooms are a real delicacy thanks to their rich and savory flavor – and not just as a side dish. We love these protein-packed mushrooms best without much fuss, simply sautéed. In our recipe, we'll show you how to quickly and deliciously prepare Shiitake mushrooms in a pan.
Quick Recipe for Preparing Shiitake Mushrooms
In this recipe, we turn fresh Shiitake mushrooms into a quick side dish. We combine their umami flavor with green onions and soy sauce. Additionally, we explain how to best store Shiitake mushrooms and when it's time to avoid eating them.

Ingredients for 6 Servings
- 360 g shiitake mushrooms
- 1.5 cloves garlic (or 1 large clove)
- 3 spring onions
- 1.5 tbsp soy sauce
- 1.5 tbsp oyster sauce
- ¾ tsp sugar
- 1.5 tsp sake
- Sesame oil
- Some sesame seeds (optional)

Preparation
Step 1
First, clean the mushrooms with a vegetable brush or a damp kitchen paper and remove the stems. You can leave the stems whole or slice them. Next, wash and chop the spring onions. Meanwhile, peel and finely chop or crush the garlic.
Step 2
Heat some sesame oil in a pan, add the garlic, and sauté it over medium heat until translucent. Then, add the mushrooms. Sauté everything for about 2-3 minutes. Be careful! Garlic can quickly turn dark and taste bitter at high temperatures.
Step 3
Now, add the sauces, sake, and sugar, and continue to sauté the mushrooms for another 2-3 minutes, stirring occasionally to ensure everything is well mixed. Finally, stir in the spring onions and cook for about 3 minutes.
Step 4
Serve the mushrooms on deep plates. If desired, sprinkle some sesame seeds on top or add a few fresh spring onion pieces. Accompany the dish with typical Asian sides such as rice, miso soup, dumplings, or tamagoyaki, the delicious Japanese omelette.

WHEN SHOULD YOU NOT EAT SHIITAKE MUSHROOMS?
If you notice dark, damp spots on shiitake mushrooms, if they feel soft, or have an unpleasant smell, it's best to discard them! Mold is also a clear indication that the mushrooms are no longer edible. Shiitake mushrooms have a short shelf life and must be stored in a cool place. The best way to keep fresh shiitake mushrooms is in the vegetable drawer of your refrigerator, where they will last for 4-7 days. When frozen, they can be kept for up to ten months.
